Beef Stew

method:

  1. Start heating up a frying pan with 1 cal cooking spray
  2. Season the beef with salt and pepper and add to the frying pan for 2-3 mins to brown
  3. Once the beef has browned, leave it aside and season with the tomato paste
  4. In a large pot / sauce pan add in 1 cal cooking spray, and then the chopped onion, celery and garlic and leave for 2-3 mins
  5. Now add in the dissolved beef stock with 450ml of boiling water
  6. Now add in the chopped potatoes and carrots
  7. Add the beef back in and mix well
  8. Add in some chopped thyme and cover and leave to simmer on a medium heat for 30 -40 mins
  9. Mix in the cornflower to thicken

Alternatively, you can cook it all in a slow cooker

  • 6 baby potatoes
  • 2 carrots
  • 1 onion
  • 1 stick of celery
  • 1 tbsp thyme
  • 1 tbsp garlic
  • 1 beef stock cube
  • Cornflour / thickening granules
