Broccoli and cheese bites

method:

  • Start by chopping up your broccoli and cauliflower into small pieces and boiling them in a saucepan until soft, approx 10 mins
  • Now drain your broccoli / cauliflower and add to a blender (or you can mash)
  • Once blended or mashed together, add the cheese and some salt and pepper and then roll them up into 12 balls, making sure you drain all the extra water and add them to the fridge for a couple hours to set (or to a freezer if short for time)
  • Once the balls have had time to set, lay out a bowl with the beaten eggs and another bowl with the breadcrumbs and simply place all the balls into the eggs and then into the breadcrumbs
  • Now heat up a frying pan with 2 tbsp olive oil and allow the oil to get hot before adding in your balls, and once hot place them in for 1 minute on each side to give them a nice golden coat
  • Serve up and enjoy with some ketchup or mayo for a low calorie savoury snack or a light lunch!
