method:

  1. In 1 saucepan, start by boiling the cauliflower for 5 mins
  2. While the cauliflower is boiling, melt the butter in a frying pan, then stir in the flour and the mustard. Gradually pour in the milk until you get the smooth creamy texture you want.
  3. Now add half of the cheese to the sauce
  4. Drain the cauliflower and mix in with the sauce
  5. Now add to a baking tray, sprinkle the rest of the cheese on top and bake for a further 20 mins
