Lemon drizzle muffins

  • Pre heat the oven to 180 degrees and line a baking tray with 12 cupcake cases
  • Beat together the butter and the sweetener / sugar, until light and creamy
  • Now add in the flour, beaten eggs and 3 tbsp's of lemon juice
  • Mix the mixture until smooth and divide the mixture into 12 cases and bake for approx 20 mins
  • While they're baking, mix together your icing sugar with 1 tbsp of lemon juice and a drop of water until you've got a light and runny mixture
  • Finally grate your lemon for decoration
  • Once the cakes have cooked and are golden, leave them to cool for 10 mins, before drizzling over your icing mixture and lemon zest

  • 120g sweetener (or brown sugar)
  • 250g self raising flour
  • 2 large eggs
  • 4 tbsp lemon juice
  • 1 lemon
  • 40g icing sugar
