Low cal blueberry cookies

  1. Pre-heat the oven to 160 degrees and prep two baking trays with grease proof paper
  2. In a mixing bowl, add in the eggs, melted butter and vanilla essence and whisk together
  3. Now add in the oats, flour, protein and bicarbonate into the wet mixture and mix well
  4. Finally add in the blueberries
  5. Now create 12 golf ball sized scoops and flatten onto the baking trays
  6. Bake for 20 mins
  7. Transfer to a cooling rack and enjoy

  • 3 eggs
  • 80g melted unsalted butter
  • 1 tsp vanilla essence
  • 120g rolled oats
  • 85g plain flour
  • 1 scoop (vanilla) protein
  • 1 tsp bicarbonate soda
  • 100g blueberries
