Mozzarella, tomato and basil penne

  • Start by weighing out your pasta and adding to a saucepan of boiling water, leave to boil for 10 mins while you prepare the sauce
  • In another larger pan, heat up the olive oil
  • Next add in the garlic, basil, chopped cherry tomatoes, vegetable stock, tomato puree, tinned tomatoes, and spinach and leave to simmer on a low heat for 5 mins
  • Now drain your pasta and add to your tomato and basil sauce and mix well
  • Finally add in your chopped mozzarella and leave for a further 2 mins before serving

  • 80g penne pasta
  • 25g mozzarella
  • 4 cherry tomatoes
  • 200g chopped tomatoes
  • 1 garlic clove
  • 1 vegetable stock cube dissolved in 100ml water
  • 2 tbsp tomato puree
  • Handful of spinach
  • Handful of fresh basil
  • 1 tbsp olive oil
