Orange chicken salad

method:

  1. Pre heat the oven for 180 degrees
  2. Add the chicken breast to a baking tray and squeeze over 1 whole orange, to add flavour and then add it to the oven
  3. Cut the potatoes in half and boil until soft for approx 10 mins
  4. Add 100g green beans to a saucepan and boil for 10 mins
  5. While everything else is cooking, prepare your salad, lay out a handful of green salad, chop up the beetroot, tomatoes and an orange and place on top of the green leaf salad
  6. After approx 10 mins of boiling the potatoes to soften, add to the baking tray with the chicken for a further 10 mins
  7. For the dressing, squeeze 1 orange into a jug, add the apple cider vinegar, honey, garlic, olive oil and salt and mix well
  8. Drain and serve your green beans and then the chicken and potatoes and finish by adding the orange vinaigrette

  • 1 chicken breast
  • 4 baby potatoes
  • 2 oranges
  • 100g green beans
  • 1 beetroot
  • 2 cherry tomatoes
  • handful of green salad

For the dressing:

  • 1 orange
  • 1 tsp of raw apple cider vinegar
  • 1 tsp honey
  • 1 clove garlic
  • 1 tbsp of olive oil
  • Pinch of salt
