Raspberry muffins

  • Pre heat the oven to 180 degrees
  • Weigh out your butter and sugar and cream together
  • Now add in your eggs, vanilla essence and yogurt and mix until combined
  • Gently fold in your flour to the wet mixture and then finally stir in your raspberries
  • Divide the mix into 12 muffin cases and bake for 15 - 20 mins

  • 100g unsalted butter (softened)
  • 120g brown sugar
  • 2 large eggs
  • 1 tbsp vanilla essence
  • 150g 0% fat greek yogurt
  • 250g self raising flour
  • 80g raspberries
