Steak with zucchini fries and peppercorn sauce

  • To start we are going to want to prepare our zucchini fries, so start by pre heating your oven to 200 degrees.
  • Now chop up your courgette (zucchini) into thin, long peices, like the shape of fries.
  • Get 2 bowls, 1 with your beaten egg, and the other with your breadcrumbs or flour, parmesan and salt and firslty add your zucchinis into the egg and then straight into the breadcrumb / flour mix so that your fries are well covered.
  • Next, place your zucchini fries onto a baking tray, cover in 1 cal cooking spray and place in the oven for 20 mins.
  • While your fries are in the oven, we can start with the sauce. Firstly, heat up a frying pan and add in your butter to melt. Add in your crushed peppercorns and garlic to fry for 1 mins, followed by the worcestershire sauce and beef stock and then finally stir in the creme fraiche, and season with salt and pepper. Now leave the sauce on a lower heat an stir regularly for approx 8 mins while the mixture thickens.
  • Finally, heat up another frying pan on a high heat with your 1 cal cooking spray an once hot add in your preferred steak, season accordingly and leave on heat for your desired taste, while flipping the steaks over half way. Approx 5-8 mins.
  • Now serve up your zucchini fries, peppercorn sauce and of course your steak.

IngredientS:

  • 1 steak of choice
  • 1 corrgette
  • 1 egg
  • 50g breadcrumbs or flour
  • 20g parmesan
  • 1 sachet of peppercorn sauce (or make fresh - see below)
  • Cooking spray (or oil)
  • Salt and pepper

For the peppercorn sauce:

  • 150ml creme fraiche
  • 125ml beef stock
  • 1 garlic glove
  • 1 tbsp butter
  • 1 tsp worcestershire sauce
  • 1 tbsp whole black peppecorns
  • Pinch of salt
