White fish salad

method:

  • Pre heat the oven to 180 degrees
  • Line a baking tray with tin foil and 1 cal cooking spray, then add in your cod fillet and top with 1/2 lemon cut up and placed on top
  • Cover the fish and cook for 25 - 30 mins
  • While the fish is cooking, prepare the salad
  • Start by placing the green salad and the tomatoes on the plate, then chop up the cucumber and add into the salad
  • Chop a courgette in half and then grate it into long thin pieces and set aside
  • 3 mins before your fish is due out of the oven, add your courgette to a saucepan with 1 cal cooking spray and heat it up
  • Serve you fish and top with your courgettes and sweet chilli sauce

  • 6 cherry tomatoes on the vine
