method:

  • Start by peeling and chopping your sweet potato and boil for 8-10 mins to soften
  • Next chop up your onion and pepper and weigh out your falafel or tofu
  • Once boiled, drain the sweet potato and add everything onto 2 skewers
  • Now heat up a frying pan with 1 cal cooking spray and fry your skewers for 5 mins on a high heat, remember to turn them over often
  • Serve up and enjoy
