method:

  • For the first rice cake, evenly spread a tbsp of hummus, and then topped with some chopped cucumber
  • For the second rice cake, chop and mash 1/2 an avocado and spread evenly over and then top with pumpkin seeds
  • Both are also seasoned with salt and pepper
