Baked sweet potato + homemade guacamole

method:

  • Start by pre heating your oven to 200 degrees
  • Rinse off your sweet potato with water and chop in half, brush over 1 tbsp of olive oil and a pinch of salt and then place in a baking tray, and leave in the oven to bake for 40 mins (opition - you can microwave first and then bake fot 10 mins for a quicker alternative)
  • While you wait, start chopping your onions, tomatoes and avocado and set aside
  • After 30 mins of having the sweet potato in the oven, heat up a frying pan and add 1 tbsp of olive oil, add in the red onion and the mixed beans and leave to soften for 3 mins, then add in your spring onion, tomatoes, crushed avocado, coriander, salt and pepper, lime juice and a tbsp of water and heat up for 2-3 mins
  • Finally, take out your baked sweet potato and top with the homemade guacamole and serve with sour cream (or salsa)

  • 1 large sweet potato
  • 2 tbsp's olive oil
  • 2 avocado's
  • 1 lime
  • Handful of chopped cherry tomatoes
  • 1/2 a red onion
  • 2 spring onions
  • Handful of coriander
  • 1/2 tin of mixed beans (black beans, red kidney beans and chickpeas)
  • 2 tbsp sour cream to serve (Salsa would also work)
  • Salt and pepper
