Baked sweet potato + homemade guacamole

method:

  • Start by pre heating your oven to 200 degrees
  • Next, rinse off your sweet potato with water and chop in half , brush over 1 tbsp of olive oil and a pinch of salt and then place in a baking tray, and leave in the oven to bake for 30-40 mins
  • While your sweet potato is cooking, heat up a frying pan with 1 cal cooking spray, add in your crushed avocado, chopped tomatoes, red onion, spring onion, beans, coriander, salt and pepper and lime juice
  • Stir regularly and leave on heat for 3-5 mins only
  • Once cooked, take out your baked sweet potato and top with the homemade guacamole and serve with sour cream

  • 1 sweet potato
  • 1 tbsp olive oil
  • 1 avocado
  • 1 lime
  • Handful of chopped cherry tomatoes
  • 1/4 red onion
  • 2 spring onions
  • Handful of coriander
  • 1/2 tin of mixed beans (black beans, red kidney beans and chickpeas)
  • 1 tbsp sour cream to serve (find a vegan alternative if your require)
  • Salt and pepper
