Beetroot burger

method:

  1. Pre heat the oven to 180 dgrees
  2. Chop up the onion and beetroot in to small, fine pieces and add to a blender
  3. Add in the grated carrots and courgette
  4. Then the chickpeas, oats and a pinch of coriander
  5. Blend until smooth, if too dry, try adding a touch of tomato puree or almond milk
  6. Mix well and then using your hands, create 4 burgers and place on a baking tray (or can be placed in fridge until ready to cook)
  7. Cook for 30 mins, before serving with your bun
