Chicken and plum stir fry

method:

  1. Pour the rice into a saucepan with water, once boiling add the chicken stock into the water with the rice and leave to cook
  2. Meanwhile, add the chicken to a non stick frying pan and cook until white
  3. Season the chicken with salt and pepper and garlic
  4. While the chicken is cooking, finely chop up and prepare the plums, spring onion, spinach, and chilli
  5. Once the chicken has cooked, add in the all the plums, spring onions, spinach and the chilli
  6. Chop up the lime and squeeze the lime juice into the frying pan, also add the soy sauce and hoisin sauce and leave to cook on a low heat for an additional 5 mins
  7. Now serve up your the rice to finish

  • 125g basmati rice (or bare naked rice)
  • 250g diced chicken
  • 2 plums
  • 1 chicken stock cube
  • 1 spring onion
  • 1 large handful of spinach
  • 1 green chilli
  • 1 lime
  • 2 tbsp soy sauce
  • 1 sachet of hoisin sauce
  • 1 tbsp garlic
