Creamy avocado pasta

method:

  1. Start by boiling your pasta, leave to cook for 8-10 mins
  2. While your pasta is boiling, blend together all the ingredients for your sauce until smooth
  3. Once the pasta has cooked, leave to cool
  4. Now mix together the pasta, sweetcorn, avocado, and tomatoes and then top with the avocado sauce
  5. Mix well and serve cold

Serves 1

IngredientS:

  • 60g dry wholewheat pasta (of your choice)
  • 1/2 avocado
  • 4 cherry tomatoes
  • 3 tbsp tinned sweetcorn

For the sauce:

  • 1/2 avocado
  • 2 tbsp plain Greek yogurt
  • A squeeze of lime juice
  • Pinch of salt
