Crispy cauliflower wraps

method:

  • Start by heating up 1 tbsp of oil in a frying pan, and leave to get hot while you prepare your cauliflower
  • Next chop up your cauliflower into small chunks
  • Whisk an egg into 1 bowl and weigh out you flour and pour into a separate bowl
  • Dip your cauliflower pieces into the egg and then the flour and then place on the oil in the frying pan
  • Repeat this with all pieces and let them crisp for about 4-5 mins
  • Lay our your wraps, layer both with a tsp of light mayo, then lettuce, then a tsp of sweet chilli and finally top both wraps with the cauliflower

  • 2 small wholewheat tortilla wraps ( or 1 big tortilla)
  • 1/2 cauliflower
  • Small handful of lettuce
  • 2 tsp light mayo
  • 2 tsp sweet chilli
  • 1 egg
  • 50g plain flour
  • 1 tbsp olive oil
