  • Marinate your chicken with paprika and peri peri sauce before placing in the oven for 20 - 25 mins (or you can fry it)
  • Weigh out and then boil your frozen peas, leave for 5 mins before adding in your mint, salt and lime juice and then leave to cook for a further 2 mins
  • Pop your bagged rice in the microwave for 2 mins
  • Serve up your sides and then add your chicken

  • 125g packet Mexican style rice
  • 80g frozen peas
  • 1 tbsp paprika
  • 2 tbsp peri peri sauce
  • 1 tsp mint sauce
  • 1 lime
  • pinch of salt
