Pesto chicken and broccoli

method:

  1. Start by making your pesto sauce - add the basil, chopped garlic, 1/2 of the parmesan cheese, rocket, pumpkin seeds, and olive oil to a blender and blend until smooth, now set aside until later
  2. Chop up broccoli and either boil or steam for 10 mins
  3. While your broccoli is cooking, chop up your chicken and add to a frying pan with 1 cal cooking spray, season with salt and pepper and cook the chicken until white
  4. Once cooked add in the pesto and mix well. Leave for 2-3 mins until pesto is warm
  5. Now serve up with the broccoli and finish with the rest of the parmesan

  • 1 garlic clove
  • 1 small bunch of basil leaves
  • 20g parmesan cheese
  • 1 handful rocket
  • 2 tsp olive oil
  • 10g pumpkin seeds
