Seafood paella

  1. Fry an onion and pepper in 1 cal cooking spray, stir in the garlic and add the chopped tomatoes
  2. Add in the parsley and paprika once the tomatoes have softened
  3. Boil the frozen peas, and once soft, add into the large frying pan
  4. Now add in the chorizo, prawns and rice
  5. Dissolve the stock cube in 100ml boiled water and pour over the rice, add a pinch of salt and stir well
  6. Leave to cook on a low heat for 40 mins
  7. Steam the mussels until they're cooked (shell is open) and arrange the mussels on top of the paella

  • 1 chopped onion
  • 1 chopped red pepper
  • 4 chopped tomatoes
  • 1 vegetable stock cube
  • 1 tbsp garlic
  • 2 tbsp paprika
  • Parsley
  • 250g spanish paella rice (or jasmine rice / bare naked rice - for less calories)
  • 125g chopped chorizo
  • 250g king prawns
  • 150g mussels
  • 80g peas
