Stuffed chicken roast

method:

  1. Pre heat the oven to 180 degrees
  2. Peel and chop up the potatoes, carrot and parsnip and boil until soft for approx 10 mins
  3. While the veg is boiling get out your chicken breast and cut a slice through the middle
  4. Now prep your stuffing by weighing out 45g of sage and onion stuffing mix and stir in with approx 50 ml of boiling water
  5. Let the stuffing cool for 5 mins and then stuff it inside the cut chicken breast
  6. Add the chicken to the oven for 25 mins
  7. Now drain the veg and add to a foiled / grease proof baking tray, season with parley, salt and pepper
  8. Add all the veg to the oven and leave to roast for 20 mins
