Sweet chilli fish cakes

method:

  • Start by pre-heating your oven to 180 degrees
  • Next put your oil into a frying pan on a high heat
  • While the oil is heating up, chop up and add your fish, green beans, breadcrumbs, coriander, milk, sweet chilli sauce and egg to a blender
  • Mix until smooth, make sure you have a smooth and damp texture (if a little dry add a touch of water or if to wet add in more breadcrumbs)
  • Now roll up the mixture into 2 golf ball sized shapes and then flatten into fish cakes
  • Add the cakes to your oil and let it golden your outsides for 1 minute each side
  • Now add to the oven to cook for a final 20 mins
  • Serve up with your salad and enjoy!

  • 50g chopped green beans
  • 50g breadcrumbs
  • 1 lime
  • Fresh coriander
  • 75g milk
  • 2 tbsp sweet chilli sauce
  • 4 tbsp vegetable / olive oil
  • Salad to serve
