Vegan Meatballs

  1. Pre heat the oven to 160 degrees
  2. Chop up the mushrooms and onion into small pieces and stir in the garlic and paprika and add to a blender
  3. Rinse the beans and add into the blender
  4. Weigh out the breadcrumbs and add into mixer, along with a small handful of spinach and tomato puree
  5. Once blended to a smooth consistency, roll out into 8 meatballs and place in the oven for 20 mins
  6. While meatballs cook, start making the sauce
  7. Add 400g of canned tomato to a saucepan, add in the chopped onion, basil and garlic and leave to cook on a low heat, ready to serve once meatballs have cooked

For the meatballs:

  • 30g mushrooms
  • 1 onion
  • 1 tbsp paprika
  • 1 tbsp of garlic
  • 400g kidney beans beans
  • 50g breadcrumbs
  • small handfull of spinach
  • 2 tbsp vegan tomato puree

For the sauce:

  • 400g canned chopped tomatoes
  • 1 onion
  • pinch of basil
  • 1 tbsp garlic
