method:

  • Start by pre heating your oven to 180 degrees
  • Next grab your baking dish and cover with grease proof paper (or butter)
  • Lay your pastry over the dish and press down into all corners, and cut off any extra pastry around your dish
  • Place your pastry in the oven to 5-8 mins to harden
  • While waiting, add 2/3 of your chopped zucchinis, your eggs, parmesan and creme fraiche to a blender and mix well
  • Now take your pastry base out of the oven and pour in your blended mix, top with the rest of your zucchinis (and more parmesan if you wish) and bake for 15 -20 mins or until the mixture has set and turnt golden
  • Serve up hot or cold.
