method:

  1. Preheat the oven to 160 degrees
  2. Grease your muffin tins and fill with 12 cupcake liners
  3. Whisk together the 6 eggs
  4. Chop up the pepper, onion, bacon, and spinach and fry in a non stick pan for 5 mins
  5. Add all ingredients from the frying pan to the egg mixture and mix
  6. Add the grated mozzarella, 1 tbsp of paprika and a pinch of salt to the jug and mix well
  7. Now pour the mixture evening into the 12 cases
  8. Bake for approx 30 mins
  9. Leave to cool for 5/10 mins

  • 3 slices of turkey bacon
  • 450g chopped spinach
  • 1 red pepper
  • 1 onion
  • tbsp paprika
